And talking about win win, I’ve given you the recipes for TWO muffins below. The fabulous Blueberry Brain Muffin and a luxurious yet simple Chocolate Chip Morning Muffin.

You will need a microwave and food processor to make this recipe super quick!
This recipe calls for inulin powder, a soluble fibre derived from plant-based sources. It is a prebiotic, making it a fantastic ingredient for gut health and a healthy alternative to sugar. Ingredients for Blueberry Brain Muffin
- 1 tbsp desiccated coconut
- 1 ½ tbsp almond meal or flour
- 1 egg
- 1 tbsp blueberries + extra for serving
- 3 tsp Pure as Inulin Powder + extra for dusting
- ¾ tsp baking powder
- Pinch of mixed spice
- ½ tbsp unsweetened coconut yoghurt, optional to serve
Method for Blueberry Brain Muffin
- Place all the ingredients into a small food processor and blend quickly to combine. Pour the mixture into a microwavable mug and microwave on high for 90 seconds.
- Turn the muffin out of the mug and let it cool for a minute or two before eating. Serve with extra blueberries, a spoonful of coconut yoghurt and a dusting of inulin powder.
Ingredients for Chocolate Chip Morning Muffin
- 1 tbsp almond meal or flour
- ½ tbsp coconut flour
- 1 tbsp raw cacao powder + extra for dusting
- 3 tsp Pure as Inulin Powder + extra for dusting
- ½ tsp baking powder
- 1 egg
- 2 tbsp water
- 1 tbsp sugar free chocolate chips + extra for topping.
Method for Chocolate Chip Morning Muffin
- Blend all the ingredients together in a microwavable mug and top with the extra choco chips.
- Microwave on high for 90 seconds and leave to cool for a minute or two before turning out of the mug and eating. Serve with a dusting of inulin and cacao powder.
