Why it’s delicious
I have a confession to make. I love bagels. They are hands down one of my favourite bread-like treats that, since turning gluten-free, I have missed like crazy. Though not essentially bagels, these little doughnut-shaped goodies are a pretty decent alternative, especially when served straight from the Air fryer, still piping hot.
Helpful hints + tips
Yes, I used an air fryer to achieve the results you may have seen in the images I posted. My air fryer fits these 4 bagels perfectly into the basket, and they only take 11 minutes to cook. You can use an oven to bake these, though your results may differ from mine.
Ground wakame It’s a great idea to buy a packet of wakame (dried seaweed) from the supermarket or Asian store and grind it until it's small enough to sprinkle. I used a coffee/spice grinder to grind mine, but you can also use a food processor, or you can chop furiously with a sharp knife until the seaweed is in small, fine pieces.
Ingredients
- 140 g (4.9 oz) gluten-free flour + extra for dusting
- 2 tsp baking powder
- 1 tsp Himalayan salt
- 190 g (6.7 oz) silken (very soft) tofu
- 1 egg white, lightly whisked
- 2 tsp cumin seeds
- 2 tsp fennel seeds
- 1 tsp ground wakame (see above)
Method
- If using an oven, preheat on bake to 200C (390F) and line a baking sheet with non-stick baking paper.
- For the air fryer, preheat to 165C (325F)
- In a mixing bowl, stir together the gluten-free flour, baking powder and salt. Add the tofu and stir to combine with a wooden spoon until a dough forms.
- Lightly dust a clean bench with a little gluten-free flour, turn the dough out onto the bench, and roll it into a ball. Divide the ball into 4 even pieces, roll each piece into a 15 cm (6 inch) sausage and join the 2 ends together to form a circle. (continue to next page)
- Brush the bagels generously with the egg white and sprinkle each bagel with some of the cumin, fennel and wakame.
- Place the bagels into the basket of the air fryer and cook for 11 minutes, or pop them onto the roasting tray and bake in the oven for 20 minutes.
- Serve warm with your favourite fillings.
