I dedicate this recipe to my adoptive country Australia, the proud home of chicken salt, a ubiquitous condiment that's packed with explosive, umami flavours.

If you're unfamiliar with chicken salt but have lived or even visited the land down under, then you've most likely have come across this salty seasoning. Why? Well, because it's usually the default salt for takeaway hot chips across the country - vegans, beware! Make sure to ALWAYS ask for no chicken salt.

Chicken salt is traditionally made from chicken bullion and LOTS of sodium. So, of course, I took it upon myself to make a healthier version that takes a nod to this culinary heritage.

My recipe produces a healthy, chicken-free version that gives so much flavour that you will want to sprinkle it on everything! It is also free from gluten, sugar, dairy and is my new current obsession. I apply a nice dusting of it on vegetables, through stir fry's and yes, on my homemade chippies.

Hints, Tips & Tricks

To help maintain a sweet taste without adding refined sugar, I use my Zero as Sugar Pure Erythritol. You'll find this ingredient in many reduced-calorie and sugar-free foods and drinks. If you would like to purchase my Zero as Sugar Pure Erythritol, which's 100% natural, has zero calories, and registers zero on the glycemic index, you can find out more here.

When you buy the onion and garlic powder, make sure you choose pure seasonings with no added oils, sugars or preservatives.
