The World's Healthiest Meatballs

Gluten-free | Sugar-free | Dairy-free | No added fats or oils

Makes 1 dozen meatballs

Why it’s delicious

Delicious and comforting, I love a succulent meatball packed full of flavour, and now you can make the world's healthiest meatballs that taste just as good as they are healthy.

Helpful hints and tips

You can use these meatballs in soup, as dumplings, in a tomato sauce or eaten for breakfast, lunch or dinner! 

You will need a small food processor to make this recipe.

This recipe requires Bridget's Sticky Sauce, a healthy cooking sauce I use in many of my recipes. It's simple, healthy and packs a lot of flavour without adding unnecessary calories. If you need the recipe, you can get it here.


Ingredients

  • 6 garlic cloves, peeled
  • 4 roasted garlic cloves, optional 
  • 2 cm (1 inch) fresh ginger root, unpeeled
  • 2 cm (1 inch) fresh turmeric root or 1 ½ tsp turmeric powder
  • 500 g (1.1 lb) skinless chicken breast,  with any fat trimmed off and breast roughly chopped
  • 1 tbsp cumin powder
  • ½ tbsp allspice powder
  • ½ tbsp garam masala
  • 1 tsp Himalayan salt
  • 2 tbsp fresh thyme leaves 
  • 2-3 tbsp Bridget's Sticky Sauce

Method

  1. In the bowl of a small food processor, place the garlic cloves, roasted garlic if using, ginger root, and turmeric root, and process for a couple of seconds till the ingredients break down and are finely chopped. 
  2. Add the chicken breast and process for another few seconds till the chicken turns into chunky mince. 
  3. Add the cumin, allspice, garam masala, salt and thyme leaves and process again very briefly to mix the spices through the meat. 
  4. Preheat your airfryer for 2 minutes on 220C (430F) or your oven on 200C (390F) 
  5. Using a small bowl of water to moisten your fingers, roll the chicken mixture into 12 even-sized balls. 
  6. Pour the sticky sauce onto a flat plate and roll the meatballs through the sauce to coat them as evenly as possible. 
  7. Roast the meatballs in the air fryer for 7-8 minutes or in the oven for 8-11 minutes until just cooked. 
  8. These balls will last in the fridge for up to 5 days or can be frozen for up to 3 months.
