You can use these meatballs in soup, as dumplings, in a tomato sauce or eaten for breakfast, lunch or dinner!
You will need a small food processor to make this recipe.
This recipe requires Bridget's Sticky Sauce, a healthy cooking sauce I use in many of my recipes. It's simple, healthy and packs a lot of flavour without adding unnecessary calories. If you need the recipe, you can get it here.
Ingredients
- 6 garlic cloves, peeled
- 4 roasted garlic cloves, optional
- 2 cm (1 inch) fresh ginger root, unpeeled
- 2 cm (1 inch) fresh turmeric root or 1 ½ tsp turmeric powder
- 500 g (1.1 lb) skinless chicken breast, with any fat trimmed off and breast roughly chopped
- 1 tbsp cumin powder
- ½ tbsp allspice powder
- ½ tbsp garam masala
- 1 tsp Himalayan salt
- 2 tbsp fresh thyme leaves
- 2-3 tbsp Bridget's Sticky Sauce
Method
- In the bowl of a small food processor, place the garlic cloves, roasted garlic if using, ginger root, and turmeric root, and process for a couple of seconds till the ingredients break down and are finely chopped.
- Add the chicken breast and process for another few seconds till the chicken turns into chunky mince.
- Add the cumin, allspice, garam masala, salt and thyme leaves and process again very briefly to mix the spices through the meat.
- Preheat your airfryer for 2 minutes on 220C (430F) or your oven on 200C (390F)
- Using a small bowl of water to moisten your fingers, roll the chicken mixture into 12 even-sized balls.
- Pour the sticky sauce onto a flat plate and roll the meatballs through the sauce to coat them as evenly as possible.
- Roast the meatballs in the air fryer for 7-8 minutes or in the oven for 8-11 minutes until just cooked.
- These balls will last in the fridge for up to 5 days or can be frozen for up to 3 months.
