90-second Cauliflower Bread

Why it’s delicious
This quick little bread is a treat when toasted and topped with your favourite ingredients whether it be a soft poached egg, sliced ripe tomato and freshly ground black pepper, avocado and a squeeze of lemon or how my grandfather would have his toast every morning, covered in nutritional yeast.
Helpful hints and tips
This bread only takes 90 seconds to make BUT you will need a microwave oven to make it happen.
If you are struggling tracking down cauliflower flour (I found mine at Woolworths supermarket in Australia) you can substitute the cauliflower flour for another non-wheat flour like quinoa flour, buckwheat flour, millet flour or coconut flour. You will need to add a tablespoon of water to the mix if using coconut flour.
Ingredients
- 2 tbsp cauliflower flour
- 1 tbsp almond flour
- 1 tsp baking powder
- Pinch of natural sea salt flakes
- 1 egg white
Method
- Add all the ingredients to a large microwavable mug and stir to combine well with a fork. Microwave on high for 90 seconds.
- Turn the mug upside down and tap the bottom of the mug to release the bread. Allow the bread to cool for a few minutes before slicing in half, toasting lightly and finishing with your ideal toppings.
