In this recipe I give you 2 versions of quick sandwich bread,
Blonde and Mixed. Can’t choose? Make both!
Feel free to change out the suggested gluten and grain free flour for your own favourites.
I use Inulin in this recipe which is a soluble fibre derived from plant based sources, and is a prebiotic so it is very good for our gut health. Inulin looks like icing (powdered) sugar and does have a slight sweetness to it, so it can be added to recipes to sweeten it slightly but thanks to its nutritional qualities, it is a powerhouse of goodness.

Ingredients for 3-minute Blonde (version 1)
- 3 tbsp almond flour
- 1 tsp Pure as Inulin Powder
- ½ tsp baking powder
- ½ tsp xanthan gum
- Pinch salt
- 1 egg
- 1 tbsp coconut yogurt, unsweetened
- 1 tbsp water
Method for 3-minute Blonde
- Mix all the ingredients together with a fork in a small bowl and then scrape with a spatula into a square microwavable container.
- Smooth the top and cook in the microwave on high for 2 ½ minutes. Allow to cool on a wire rack if you are wanting to slice the bread and make a sandwich.
- You can also freeze the bread once sliced and defrost either in the toaster or leave overnight in the freezer.

- 3 tbsp LSA (linseed, sunflower and almond flour mix)
- 1 tsp Pure as Inulin Powder
- ½ tsp baking powder
- ½ tsp xanthan gum
- Pinch salt
- 1 egg
- 1 tbsp coconut yogurt, unsweetened
- 1 tbsp water
Method for 3-minute Mixed Sandwich Bread

Why is this bread made in small amounts? My dietician said Inulin is bad for you..

Yes, we don’t see why you couldn’t! If using an oven, bake at 180C for 10-15 minutes. Just remember; the texture of the bread may differ slightly when cooked in an oven.

Can you bake the bread in the oven
