3-minute Sandwich Bread

Gluten-free | Sugar-free | Dairy-free | Grain-free | Yeast-free

Makes 2 slices

Why it's delicious

Time can be the enemy when trying to eat healthy and maintain all your hard work, so this recipe is a life saver as it only takes 3 minutes, including mixing!

Helpful hints and tips

In this recipe I give you 2 versions of quick sandwich bread,

Blonde and Mixed. Can’t choose? Make both!

Feel free to change out the suggested gluten and grain free flour for your own favourites.

I use Inulin in this recipe which is a soluble fibre derived from plant based sources, and is a prebiotic so it is very good for our gut health. Inulin looks like icing (powdered) sugar and does have a slight sweetness to it, so it can be added to recipes to sweeten it slightly but thanks to its nutritional qualities, it is a powerhouse of goodness.

Inulin won't spike your blood glucose levels, raise your insulin levels and well support a healthy gut digestive system. You can purchase inulin powder now for delivery to your door through us at Bridget’s Healthy Kitchen by clicking on this link: Pure as Inulin by Bridget's Healthy Kitchen.

Ingredients for 3-minute Blonde (version 1)

  • 3 tbsp almond flour
  • 1 tsp Pure as Inulin Powder
  • ½ tsp baking powder
  • ½ tsp xanthan gum
  • Pinch salt
  • 1 egg
  • 1 tbsp coconut yogurt, unsweetened
  • 1 tbsp water

Method for 3-minute Blonde

  1. Mix all the ingredients together with a fork in a small bowl and then scrape with a spatula into a square microwavable container.
  2. Smooth the top and cook in the microwave on high for 2 ½ minutes. Allow to cool on a wire rack if you are wanting to slice the bread and make a sandwich.
  3. You can also freeze the bread once sliced and defrost either in the toaster or leave overnight in the freezer.

Ingredients for 3-minute Mixed Sandwich Bread (version 2)

  • 3 tbsp LSA (linseed, sunflower and almond flour mix)
  • 1 tsp Pure as Inulin Powder
  • ½ tsp baking powder
  • ½ tsp xanthan gum
  • Pinch salt
  • 1 egg
  • 1 tbsp coconut yogurt, unsweetened
  • 1 tbsp water

Method for 3-minute Mixed Sandwich Bread

Hi Lesley,

This particular recipe is for 1 serving. If you would like a bigger loaf, we have many other recipes available. Simply click the ‘Blog’ button at the top of the page, and scroll through until you find the recipe you like :)

Regarding Inulin, we also have a few blogs explaining the health benefits of it. If you would like to find out more, simply click “search” at the top right-hand corner and type in “inulin”. The blogs will then appear on the right-hand side.

Thanks,

Why is this bread made in small amounts? My dietician said Inulin is bad for you..

Hi Joy,

Yes, we don’t see why you couldn’t! If using an oven, bake at 180C for 10-15 minutes. Just remember; the texture of the bread may differ slightly when cooked in an oven.
