Pico De Gallo | Easy Tomato Salsa

Makes 1 cup

Why it’s delicious

The spicy nature of this fresh salsa is addictive! Turn the heat up or down by adding more or less chillies to suit your taste, and then enjoy the ride. 

Helpful hints and tips

Add or delete as many jalapenos or chillies as you like. This salsa is meant to be spicy, but if that's not for you, tone it down by leaving out some of the chillies and still revel in the delicious freshness.

Ingredients

  • 2 large ripe yet firm tomatoes, finely diced
  • 3-4 tbsp finely diced jalapenos or chillies
  • ½ medium red onion, finely diced
  • 1 handful of fresh coriander or cilantro,  finely chopped
  • 1 lime, juiced
  • Himalayan salt and  freshly ground black pepper

Method

Combine all ingredients in a bowl and stir to mix. Taste for flavour, adding more salt, pepper or lime juice to taste.
