Healthy Waffles (Sweet + Savoury Options)

Gluten-free | Sugar-free | Dairy-free

Makes: 7-8 small waffles

Goodness me, these waffles are good. They are the best of both worlds; easy to make and satisfying to eat. If you're considering giving these a go, do it - you won't be disappointed! 

They're free from gluten, sugar and dairy but are still a delightful treat! 

You can have them for dessert, breakfast, lunch or even dinner, thanks to their versatility. I have given you instructions for both sweet and savoury waffles in this recipe, so experiment with your toppings and enjoy!  

Hints, Tips & Tricks 

This recipe calls for inulin powder, a soluble fibre derived from plant-based sources. It is prebiotic, making it a fantastic ingredient for our gut health. It's also a healthy alternative to sugar. As this recipe is gluten-free, I have used xanthan gum to provide elasticity and fluffiness that the gluten would otherwise provide. 

For the sweet waffles: serve them with coconut yoghurt, berries and fibre syrup. Or, dust them with cinnamon sugar made with 1 teaspoon of cinnamon and 2 tsp of Inulin powder or a drizzle of Fibre syrup.  

For savoury waffles: serve them with poached eggs, bacon, avocado or tomato. You can also use them for sandwiches or tacos. 

If you don't have a waffle iron, you can cook the mixture in a frying pan like pikelets or small pancakes.


Recipe

Ingredients 

Sweet waffles 

  • 2 heaped tbsp coconut yoghurt 
  • 3 eggs + 1 egg white 
  • 70 g (2.4 oz) almond flour or meal 
  • 20 g (0.7 oz) coconut flour 
  • 1 tsp baking powder 
  • 1⁄2 tsp xanthan gum 
  • 2 1⁄2 tbsp inulin powder + extra for dusting 

Savoury waffles 

  • 2 heaped tbsp coconut yoghurt 
  • 2 eggs + 2 egg white 
  • 70 g (2.4 oz) almond flour or meal 
  • 20 g (0.7 oz) coconut flour 
  • 1 tsp baking powder 
  • 1⁄2 tsp xanthan gum Pinch of salt 
  • 2 tsp coconut oil, for brushing the waffle iron 

Method 

  1. Heat your waffle iron at medium temperature. 
  2. Mix all the ingredients for either mixture in a bowl and stir well to combine. 
  3. Very lightly brush the waffle iron with coconut oil and add two tablespoons of the waffle batter to the centre of the iron and flatten slightly with the back of the spoon. 
  4. Cook the waffle for 2-3 minutes. The waffle should be golden brown when ready. Remove the waffle from the iron and continue to cook the waffles until all the batter is gone.
  5. Serve your waffles with the toppings of your choice. These waffles also last well. Store in the fridge for 2-3 days, and to reheat, pop in the toaster or air fryer to crisp up a bit before serving.
